These easy-to-make cheese bites are a cheesy snack lover’s dream. With a crispy exterior and a gooey, cheesy center, these homemade treats are perfect for snacking on the go or as a party appetizer.

Cheese Dough:
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup all-purpose flour
- 4 tablespoons unsalted butter (cold and cubed)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1/2 teaspoon salt
- 2–3 tablespoons cold water
Additional:
- olive oil spray or melted butter for brushing
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Prepare the dough: In a food processor, combine cheddar cheese, mozzarella cheese, flour, garlic powder, paprika, and salt. Pulse until crumbly. Add cold butter and pulse again until the mixture resembles coarse crumbs. Slowly add cold water, 1 tablespoon at a time, and pulse just until the dough begins to come together.
- Shape and bake: Turn the dough out onto a lightly floured surface and roll it out to about 1/4-inch thickness. Cut into bite-sized shapes. Place on the baking sheet and lightly spray or brush with olive oil or melted butter. Bake for 12–15 minutes, or until golden and crispy. Let cool slightly before serving.
Notes
- You can add a pinch of cayenne for extra heat or swap in your favorite cheese combinations.
- Best served warm but can be stored in an airtight container for up to 3 days.
