Puff Pastry:
- 1 sheet frozen puff pastry, thawed
Filling:
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 5 oz fresh spinach, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground nutmeg
- 1/2 cup crumbled feta cheese
- 1 egg, beaten (for filling)
For Egg Wash:
- 1 egg, beaten
Optional Topping:
- Sesame seeds
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Sauté vegetables: Heat olive oil in a pan, sauté onion and garlic until soft. Add spinach, cook until wilted. Season with salt, pepper, and nutmeg. Let cool slightly.
- Prepare filling: Mix in crumbled feta and beaten egg.
- Roll out pastry: On a floured surface, roll out the puff pastry. Spread the filling over the pastry, leaving a border.
- Roll pastry: Roll tightly into a log, cut into pieces, and place on baking sheet.
- Bake: Brush with beaten egg, sprinkle sesame seeds. Bake for 20–25 minutes until golden brown.
- Serve: Let cool slightly before serving.

- You can use frozen spinach if fresh is unavailable.
