These Adorable Rice Krispie Nests are a fun and festive treat perfect for springtime or Easter celebrations. Crispy and sweet marshmallow-coated Rice Krispies are shaped into little nests, decorated with green coconut ‘grass,’ and topped with colorful mini candy robin eggs for a delightful, edible centerpiece.

  • 1 ½ tsp vanilla extract
  • ¼ tsp salt
  • 5 cups Rice Krispies cereal
  • 1 cup sweetened shredded coconut
  • Green food coloring (3-4 drops)
  • 48 mini candy robin eggs


Instructions

  1. Prepare the pans: Spray two muffin pans thoroughly with baking spray to prevent sticking and facilitate easy removal of the nests once set.
  2. Melt butter and marshmallows: In a large pot or Dutch oven over medium-low heat, melt the butter. Add the marshmallows and stir continuously until they are completely melted and combined with the butter. Remove from heat, then stir in the vanilla extract and salt to flavor.
  3. Combine cereal with marshmallow mixture: Gently mix the Rice Krispies cereal into the melted marshmallow mixture until all cereal is evenly coated for a consistent texture and sweetness.
  4. Form the nests: Using a heaping ¼ cup of the mixture, fill each of the 16 muffin cups. Press down in the center of each mound with a 1-tablespoon measuring spoon to create a hollow ‘nest’ shape.
  5. Set nests: Allow the nests to cool and set in the pans at room temperature for about one hour, so they firm up and hold their shape well.
  6. Color the coconut: Place the shredded coconut into a large resealable bag, add 3-4 drops of green food coloring, seal tightly, and shake vigorously until the coconut is evenly tinted green, resembling grass.
  7. Decorate nests: Spoon about 1 tablespoon of the colored coconut into the hollow center of each nest to simulate grass. Then, top each nest with three mini candy robin eggs to complete the look and add a sweet finishing touch.
