Description

This Air Fryer Blueberry Yogurt Cake is a delightful and healthier dessert option that combines the freshness of blueberries with the tanginess of Greek yogurt, all made in the convenience of your air fryer.

Ingredients

Scale

Dry Ingredients:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients:

  • 1/2 cup granulated sugar
  • 1/2 cup plain Greek yogurt
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract

Additions:

  • 1 cup fresh or frozen blueberries (tossed in 1 teaspoon flour)
  • Nonstick spray or oil for greasing

Instructions

  1. Preheat the Air Fryer: Preheat the air fryer to 320°F (160°C).
  2. Prepare Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Combine Wet Ingredients: In a large bowl, mix sugar, Greek yogurt, vegetable oil, egg, and vanilla extract until smooth.
  4. Mix Batter: Gradually add dry ingredients to wet ingredients until just combined. Fold in flour-coated blueberries.
  5. Grease Pan: Grease a 6-inch round baking pan and pour in the batter.
  6. Air Fry: Air fry for 25–30 minutes until a toothpick comes out clean.
  7. Cool and Serve: Let the cake cool in the pan before transferring to a wire rack.

Notes

  • If using frozen blueberries, do not thaw before adding to the batter.
  • For a citrusy twist, add 1 teaspoon of lemon zest.
  • Serve plain or dust with powdered sugar once cooled.
