- 2 cups cold mashed potatoes
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped green onions
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg (beaten)
- 1 cup panko breadcrumbs
- olive oil spray
Instructions
- Prepare the Potato Mixture: In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, green onions, garlic powder, salt, and pepper. Mix well.
- Form the Balls: Scoop out 2 tablespoons of the mixture and roll into balls.
- Coat with Egg and Breadcrumbs: Dip each ball in beaten egg, then roll in panko breadcrumbs.
- Air Fry: Preheat air fryer, then air fry the potato balls until golden brown and crispy.
