Description

These Apple Cinnamon Muffins are a delightful treat perfect for breakfast or a snack. Moist and flavorful, they are packed with chunks of fresh apples and warm spices. Easy to make and even easier to enjoy!

Ingredients

Scale

Dry Ingredients:

  • 1 ¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg

Wet Ingredients:

  • ½ cup unsalted butter (softened)
  • ½ cup granulated sugar
  • ¼ cup brown sugar (packed)
  • 2 large eggs
  • ½ cup plain Greek yogurt
  • 1 tsp vanilla extract
  • 1 ½ cups finely chopped and peeled apples (such as Honeycrisp or Granny Smith)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and prepare a 12-cup muffin tin with liners or by greasing lightly.
  2. Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Cream butter and sugars: In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add wet ingredients: Add eggs one at a time, mixing well after each. Stir in yogurt and vanilla extract until smooth.
  5. Combine and bake: Gradually mix in the dry ingredients until just combined. Fold in the chopped apples. Divide batter into muffin cups and bake for 18–22 minutes or until a toothpick comes out clean.
  6. Cool and serve: Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • You can use whole wheat flour for half the all-purpose flour for added fiber.
  • Add chopped walnuts or pecans for extra crunch.
  • These muffins freeze well for up to 3 months.
