Dry Ingredients:
- 1 ¾ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
Wet Ingredients:
- ½ cup unsalted butter (softened)
- ½ cup granulated sugar
- ¼ cup brown sugar (packed)
- 2 large eggs
- ½ cup plain Greek yogurt
- 1 tsp vanilla extract
- 1 ½ cups finely chopped and peeled apples (such as Honeycrisp or Granny Smith)
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and prepare a 12-cup muffin tin with liners or by greasing lightly.
- Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Cream butter and sugars: In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
- Add wet ingredients: Add eggs one at a time, mixing well after each. Stir in yogurt and vanilla extract until smooth.
- Combine and bake: Gradually mix in the dry ingredients until just combined. Fold in the chopped apples. Divide batter into muffin cups and bake for 18–22 minutes or until a toothpick comes out clean.
- Cool and serve: Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- You can use whole wheat flour for half the all-purpose flour for added fiber.
- Add chopped walnuts or pecans for extra crunch.
- These muffins freeze well for up to 3 months.
