- 2 large eggs
- 1/2 cup vegetable oil
- 1/4 cup buttermilk
- 1 teaspoon vanilla extract

- 3 cups peeled and finely chopped apples (such as Granny Smith)
- 1 cup chopped pecans
Instructions
- Preheat and Prepare: Preheat the oven to 350°F and grease a 9×13-inch baking dish.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking soda, salt, cinnamon, and nutmeg.
- Combine Wet Ingredients: In a separate bowl, beat the eggs, oil, buttermilk, and vanilla extract until well combined.
- Combine Batter: Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the chopped apples and pecans.
- Bake: Pour the batter into the prepared baking dish and bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
- Make Caramel Glaze: While the cake is baking, prepare the caramel glaze by melting butter, brown sugar, and milk in a saucepan until smooth.
- Glaze: Pour the warm glaze over the hot cake as soon as it comes out of the oven.
- Cool and Serve: Let the cake cool before slicing and serving.
Notes
- You can substitute walnuts for pecans if desired.
