Apple Filling
- 3-4 Apples (peeled, cored, and diced, preferably Gala or Granny Smith)
- 1/4 cup Brown Sugar
- 1 teaspoon Cinnamon
- 1 teaspoon Nutmeg
- 1/2 teaspoon Allspice
- 1 Tablespoon Cornstarch
- 1/4 cup Tequila (or water)
Taquito Coating
- 8-10 Small Flour Tortillas
- 2 Tablespoons Butter (melted)
- 1/4 cup Brown Sugar
- 1/4 cup Granulated Sugar
- 1/2 teaspoon Cinnamon

Instructions
- Prepare the Apple Filling: In a medium-sized frying pan, combine the diced apples, brown sugar, cinnamon, nutmeg, allspice, cornstarch, and tequila (or water). Cook over medium heat, simmering for 10-15 minutes while stirring frequently to evenly coat the apples in the brown sugar sauce. Remove from heat and let cool to room temperature.
- Assemble the Taquitos: Preheat the oven to 350°F (175°C). In a small bowl, whisk together brown sugar, granulated sugar, and cinnamon to create the cinnamon sugar mixture. Wrap tortillas in a damp paper towel and microwave for 30 seconds to soften. Lay tortillas flat on a baking sheet and spoon about 1/4 cup of the cooled apple filling into each tortilla. Roll the tortillas tightly around the filling and place them seam-side down on the baking sheet.
- Bake and Finish: Melt the butter in the microwave for 30 seconds. Brush each rolled tortilla generously with melted butter. Bake in the oven for 15 minutes until golden and crispy. Remove from oven, brush with more melted butter, then sprinkle cinnamon sugar mixture on top. Drizzle caramel sauce over the taquitos. Serve warm, optionally topped with whipped cream or ice cream for extra indulgence.
Notes
- Using Gala apples will provide a sweeter filling, while Granny Smith apples add a tart contrast.
- The tequila in the filling can be substituted with water for a non-alcoholic version without compromising the texture.
