Description

This Authentic Greek Potatoes recipe delivers crispy, lemon-infused wedges perfectly roasted to golden perfection. Featuring simple ingredients like fresh lemon juice, garlic, and oregano, these potatoes are soaked in broth for tenderness and finished with a crisp, flavorful exterior. Ideal as a side dish for any Mediterranean-inspired meal.

Ingredients

Scale

Potatoes

  • 2-3 pounds Russet (Idaho), Yukon Gold, or Maris Piper potatoes

Seasoning and Marinade

  • Fresh lemon juice from 1-2 lemons
  • 1/4 to 1/3 cup extra virgin olive oil
  • 4-5 cloves fresh garlic, minced or finely crushed
  • Dried Greek oregano, to taste
  • Salt, to taste
  • Freshly ground black pepper, to taste

Cooking Liquid

  • Vegetable or chicken broth, or water, enough to cover the bottom of the baking dish

Optional Garnish

  • Fresh chopped parsley

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the potatoes.
  2. Prepare Potatoes: Wash the potatoes thoroughly. Peel if preferred, then cut into consistent 1.5 to 2-inch wedges or chunks to ensure even cooking.
  3. Season Potatoes: In a large mixing bowl, combine potato chunks with extra virgin olive oil, fresh lemon juice, minced garlic, dried oregano, salt, and freshly ground black pepper. Toss well to coat all pieces evenly with the mixture.
  4. Arrange in Baking Dish: Transfer the seasoned potatoes into a large, shallow baking dish or roasting pan. Spread them out to avoid overcrowding, which helps in even cooking and crispiness.
  5. Add Cooking Liquid: Pour enough vegetable or chicken broth (or water) into the bottom of the baking dish around the potatoes to keep them moist as they cook.
  6. Initial Bake: Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 30 minutes. This step softens the potatoes.
  7. Flip and Increase Heat: Remove the foil carefully, stir or flip the potatoes gently to redistribute the heat, then increase the oven temperature to 425°F (220°C).
  8. Final Roasting: Return the dish uncovered to the oven and continue roasting for an additional 45-60 minutes. Stir or flip the potatoes every 15-20 minutes to develop a golden brown, crispy exterior throughout.
  9. Serve and Garnish: When the potatoes are crispy and cooked through, remove from the oven. Adjust seasoning if necessary, garnish with fresh chopped parsley if desired, and serve immediately.

Notes

  • Use starchy potatoes like Russet or Maris Piper for the best crispy texture.
  • Adjust lemon juice amount based on your preference for tartness.
  • If you want extra crispy potatoes, increase roasting time slightly but watch carefully to avoid burning.
  • Broth adds extra flavor and moisture; water can be used as a neutral substitute.
  • Ensure even cutting size for uniform cooking.
