Main Ingredients:
- 12 oz rotini pasta, cooked and cooled
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1/2 cup corn kernels (fresh or thawed if frozen)
- 1/4 cup chopped fresh cilantro
- 1/4 cup crumbled feta cheese
Lime Dressing:
- Juice of 1 lime
- 2 tablespoons olive oil
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions
- Cook the Rotini Pasta: Prepare the rotini pasta according to package directions. Drain and rinse under cold water.
- Prepare the Salad: In a large bowl, combine the cooked pasta, diced avocados, cherry tomatoes, red onion, corn, cilantro, and feta cheese.
