Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking.
- Cook Apple Filling: In a small saucepan over medium heat, combine diced apples, brown sugar, cinnamon, nutmeg, vanilla extract, and lemon juice. Cook for 5–7 minutes, stirring occasionally until the apples soften.
- Thicken Filling: Mix cornstarch and water to create a slurry, then stir it into the apple mixture. Continue cooking for 1–2 minutes until the filling thickens. Remove from heat and allow to cool slightly.
- Soften Rice Paper: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10 seconds until softened, then place it on a clean surface to work.
- Assemble Rolls: Spoon 1–2 tablespoons of the apple filling into the center of the softened rice paper. Fold in the sides and roll tightly, similar to a spring roll. Repeat for remaining wrappers and filling.
- Prepare for Baking: Place the assembled rolls seam side down on the prepared baking sheet. Lightly spray or brush the tops with cooking spray or melted butter to help crisp the exterior.
- Bake Rolls: Bake in the preheated oven for 18–20 minutes, flipping halfway through to ensure even golden crispness on all sides.
- Cool and Serve: Allow the rolls to cool slightly on a wire rack. Optionally dust with powdered sugar before serving for extra sweetness.
