Description

Additional:

  • 1 cup fresh or frozen blueberries
  • Nonstick cooking spray
  • 1/2 cup powdered sugar
  • 1–2 teaspoons milk (for glaze)


Instructions

  1. Preheat and Prepare: Preheat the oven to 375°F (190°C) and lightly spray a mini muffin tin with nonstick cooking spray.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt.
  3. Combine Wet Ingredients: In another bowl, mix the milk, egg, vanilla extract, and melted butter until combined. Pour the wet ingredients into the dry and stir gently until just combined.
  4. Add Blueberries: Fold in the blueberries carefully to avoid overmixing.
  5. Bake: Spoon the batter into the muffin tin, bake for 12–15 minutes until golden, and a toothpick comes out clean.
  6. Make Glaze: While the bites cool slightly, whisk powdered sugar with milk to make a glaze. Drizzle over the fritter bites before serving.

Notes

  • Frozen blueberries can be used, but do not thaw them before mixing to prevent streaking.
  • Add a touch of lemon zest to the batter for extra brightness.
