Beef Stew:

  • 1 ½ pounds beef stew meat, cut into 1-inch cubes
  • 2 tablespoons olive oil

Soup:

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups water
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 3 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 2 medium potatoes, peeled and diced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 cup corn kernels (fresh or frozen)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 bay leaf
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)


Instructions

  1. Sear the Beef: In a large pot, heat olive oil and brown the beef on all sides. Set aside.
  2. Sauté Aromatics: In the same pot, sauté onion and garlic until softened.
  3. Cook the Soup: Return beef to the pot, add broth, water, tomatoes, herbs, and simmer. Add vegetables, season, and cook until tender.
