Beef Stew:
- 1 ½ pounds beef stew meat, cut into 1-inch cubes
- 2 tablespoons olive oil
Soup:
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups water
- 1 can (14.5 ounces) diced tomatoes, undrained
- 3 carrots, peeled and sliced
- 2 celery stalks, sliced
- 2 medium potatoes, peeled and diced
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 cup corn kernels (fresh or frozen)
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 bay leaf
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions
- Sear the Beef: In a large pot, heat olive oil and brown the beef on all sides. Set aside.
- Sauté Aromatics: In the same pot, sauté onion and garlic until softened.
- Cook the Soup: Return beef to the pot, add broth, water, tomatoes, herbs, and simmer. Add vegetables, season, and cook until tender.
