Chicken Marinade

  • 2 tbsp soy sauce (divided)
  • 2 tbsp oil (avocado or sesame)
  • 8 oz mushrooms, sliced (baby bella or cremini preferred)
  • 3 cloves garlic, minced

Instructions

  1. Marinate Chicken: In a bowl, toss the bite-sized chicken pieces with cornstarch, 1 tablespoon of soy sauce, and freshly cracked black pepper. Let this mixture sit for 10 to 15 minutes to allow the flavors to penetrate and to help tenderize the chicken.
  2. Sear Chicken: Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the marinated chicken in a single layer, making sure not to overcrowd the pan. Sear the chicken until it is golden brown and cooked through, about 5 to 7 minutes. Once done, remove the chicken from the skillet and set it aside.
  3. Cook Mushrooms: In the same skillet, add the remaining 1 tablespoon of oil. Add the sliced mushrooms and sauté them until they become browned and tender, releasing their natural umami flavor.
  4. Add Garlic: Stir in the minced garlic with the mushrooms and cook for about 30 seconds until the garlic is fragrant but not burnt, enhancing the overall aroma.
  5. Combine & Sauce: Return the cooked chicken to the skillet with the mushrooms and garlic. Add the remaining 1 tablespoon soy sauce, 1 tablespoon oyster sauce, and an additional sprinkle of black pepper to taste.
