- 1 teaspoon cornstarch mixed with 1 tablespoon water
For the French toast:
- 6 slices brioche or challah bread
- 3 large eggs
- 1/2 cup whole milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- pinch of salt
- butter or oil for frying
Optional toppings:
- powdered sugar
- whipped cream
- extra fresh blackberries
Instructions
- Make the blackberry compote: Combine blackberries, sugar, and lemon juice in a saucepan. Cook until the berries break down. Add cornstarch slurry, cook until slightly thickened. Set aside.
- Prepare the French toast: Whisk eggs, milk, vanilla, cinnamon, and salt. Dip bread slices in the mixture. Cook in butter/oil until golden.
- Serve warm with blackberry compote and toppings.
