Using a knife, roughly chop the avocados in the bowl, then switch to a fork and mash until about three-quarters are broken up. Whisk the mashed avocado with the fork to create a creamy, whipped texture.
  3. Mix the Guacamole: Fold in the finely chopped romaine lettuce, red onion, quartered tomatoes, lime juice, chopped cilantro, minced garlic, and the cooked bacon pieces. Season the mixture with kosher salt and freshly ground black pepper to taste. Give the guacamole one final gentle stir to combine all ingredients evenly.
