Description

Delicious and easy-to-make BLT skewers served with a creamy avocado sauce. Perfect as a crowd-pleasing appetizer, these skewers combine crispy bacon, fresh cherry tomatoes, crisp romaine lettuce, and toasted bread cubes, paired with a tangy, smooth avocado dip made with Greek yogurt and lime juice.

Ingredients

Scale

Skewers

  • 12 slices of thick-cut bacon, cooked until crisp and cut into thirds
  • 2 cups cherry tomatoes
  • 2 cups romaine lettuce leaves, torn into small pieces
  • 1 baguette, sliced into 1-inch cubes and toasted
  • Wooden or metal skewers

Avocado Sauce

  • 2 ripe avocados, peeled and pitted
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons fresh lime juice
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the skewers: Thread one piece of bacon, a cherry tomato, a piece of lettuce, and a cube of toasted bread onto each skewer. Continue repeating this pattern until the skewer is full, leaving space at the ends for easy handling.
  2. Make the avocado sauce: In a blender or food processor, combine the avocados, Greek yogurt, lime juice, garlic, and olive oil. Blend until smooth and creamy. Season the sauce with salt and pepper to taste.
  3. Serve: Transfer the avocado sauce to a small bowl for dipping. Serve the skewers arranged on a platter with the sauce on the side, or lightly drizzle the sauce over the skewers before serving.

Notes

  • For extra flavor, brush the bread cubes with olive oil and garlic before toasting.
  • Substitute romaine lettuce with butter lettuce or baby spinach for variation.
  • To make this dish gluten-free, use gluten-free bread cubes instead of baguette.
