Description

These Brownie Mix Cookies are a quick and delicious treat that combines the rich, fudgy flavor of brownies with the fun texture of cookies. Made from a simple brownie mix base, vegetable oil, eggs, and chocolate chips, these cookies are perfect for a quick dessert or snack. With a soft, chewy texture and an intense chocolate taste, they are sure to satisfy any chocolate lover’s cravings in just 30 minutes.

Ingredients

Scale

Ingredients

  • 18.3 oz box Fudge Brownie Mix
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 cup chocolate chips (preferably dark chocolate)

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Make Dough: In a large bowl, combine the brownie mix, vegetable oil, and eggs. Stir all ingredients together until a soft dough forms, ensuring the mixture is uniform without over-mixing.
  3. Add Chocolate Chips: Fold the chocolate chips gently into the dough to distribute them evenly while maintaining the dough’s softness.
  4. Form Cookies: Use a cookie scoop to drop 1-1/2 inch thick dough balls onto the prepared baking sheet, spacing each cookie about 2 inches apart so they have room to expand while baking.
  5. Optional Topping: For extra chocolate richness, add a few additional chocolate chips on top of each dough ball before baking.
  6. Bake Cookies: Bake in the preheated oven for 10 minutes, then check the cookies. If they haven’t fully set, bake for an additional 1 to 2 minutes until they are done but still soft in the center.
  7. Cool Cookies: Remove the baking sheet from the oven and allow the cookies to cool on it for about 10 minutes. Then transfer them to a cooling rack to cool completely to maintain texture and prevent sogginess.

Notes

  • Do not overbake the cookies; they should be soft and fudgy, not dry.
  • If you don’t have parchment paper, you can use a silicone baking mat as an alternative.
  • For variation, try mixing in nuts or white chocolate chips instead of dark chocolate chips.
  • Cookies will keep well in an airtight container at room temperature for up to 3 days.
  • Allow cookies to cool completely before storing to prevent moisture buildup.
