Description

These Buffalo Chicken Bacon Mozzarella Bombs are savory, cheesy, and packed with a spicy buffalo chicken filling wrapped in fluffy biscuit dough. Perfect as a flavorful appetizer or a hearty snack, they combine shredded chicken, crispy bacon, melty mozzarella, and classic ranch and buffalo flavors all baked to golden perfection.

Ingredients

Scale

Filling

  • 1 pound cooked chicken, shredded
  • 1/2 cup buffalo sauce (adjust based on spice preference)
  • 1 cup shredded mozzarella cheese
  • 6 strips of cooked bacon, crumbled
  • 1/4 cup cream cheese, softened
  • 1/4 cup ranch dressing
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder

Dough

  • 1 package refrigerated biscuit dough (16 oz)

Other

  • Non-stick cooking spray
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with non-stick cooking spray to prevent sticking.
  2. Prepare Filling: In a large mixing bowl, combine shredded chicken, buffalo sauce, shredded mozzarella, crumbled bacon, softened cream cheese, ranch dressing, garlic powder, and onion powder. Mix thoroughly until all ingredients are evenly distributed.
  3. Prepare Biscuit Dough: Open the package of refrigerated biscuit dough and separate the biscuits. Flatten each biscuit into a round disc approximately 4 inches in diameter using your fingers or a rolling pin.
  4. Fill Biscuit Discs: Spoon about 2 tablespoons of the buffalo chicken mixture into the center of each flattened biscuit disc, being careful not to overfill to avoid leaking.
  5. Seal Bombs: Fold the edges of each biscuit over the filling to form a ball shape. Pinch the edges together tightly to seal the filling inside with no gaps.
  6. Arrange on Baking Sheet: Place each filled and sealed bomb seam-side down on the prepared baking sheet. Continue until all filling is used.
  7. Prepare for Baking: Lightly spray the tops of the bombs with non-stick cooking spray for a golden finish. Optionally, sprinkle a little extra garlic powder on top for added flavor.
  8. Bake: Bake in the preheated oven for 15-20 minutes until the biscuit dough is golden brown and cooked through.
  9. Serve: Remove from the oven and allow the bombs to cool slightly. Garnish with freshly chopped parsley before serving for added color and flavor.

Notes

  • Adjust the amount of buffalo sauce to control the spice level to your preference.
  • Ensure the biscuit edges are tightly sealed to prevent filling from leaking during baking.
  • Leftover bombs can be refrigerated and reheated in the oven for best texture.
  • You can substitute the biscuit dough with pizza dough if preferred.
  • Serve with extra ranch or blue cheese dressing for dipping if desired.
