Description

Butter Swim Biscuits are a rich and tender Southern-style biscuit recipe that bakes the dough directly in melted butter, creating a crispy, golden crust with a soft, buttery interior. Perfectly scored into squares and baked until golden brown, these biscuits are an indulgent treat ideal for breakfast or as a side dish.

Ingredients

Scale

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt

Wet Ingredients

  • 1 ¾ cups buttermilk
  • ½ cup salted butter (1 stick), melted
  • ½ cup salted butter (1 stick) for baking dish

Instructions

  1. Preheat the Oven: Preheat your oven to 450°F (232°C) and place an 8×8-inch baking dish inside the oven with ½ cup (1 stick) of salted butter to melt while the oven heats.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and salt until thoroughly combined.
  3. Add Buttermilk: Pour in the buttermilk and mix until a sticky dough forms, ensuring all ingredients are incorporated without overmixing.
  4. Prepare Baking Dish: Carefully remove the hot baking dish with melted butter from the oven and pour the biscuit dough directly into the butter.
  5. Spread Dough: Using a spatula, gently spread the dough evenly throughout the baking dish. Some of the melted butter will float to the top, which will help create a crispy crust.
  6. Score the Dough: Use a knife to score the dough into 9 equal squares to make serving easier after baking.
  7. Bake: Place the dish back into the oven and bake for 22–25 minutes or until the tops are golden brown and the edges are crispy.
  8. Cool and Serve: Let the biscuits cool slightly before serving to allow the butter to soak in and the biscuits to set perfectly.

Notes

  • Using an 8×8-inch baking dish provides the perfect thickness for these biscuits.
  • Melting the butter in the baking dish beforehand prevents sticking and creates a delicious crust.
  • Be careful when removing the hot baking dish from the oven to avoid burns.
  • Do not overmix the dough to keep the biscuits tender.
  • Serve warm with additional butter, honey, or jam if desired.
