Pizza Dough

  • 1 package Pillsbury’s Bestâ„¢ refrigerated thin crust pizza dough
  • 1 tablespoon olive oil

Vegetable Topping

  • 1 tablespoon butter
  • 1 cup thinly sliced onion
  • 1/4 teaspoon salt
  • 1 package (8 oz) sliced mushrooms
  • 2 cloves garlic, chopped
  • 1 cup baby spinach leaves, slightly packed

Cheese and Herbs

  • 1 1/2 cups shredded mozzarella cheese (6 oz)
  • 1/2 cup shredded Parmesan cheese
  • 1 teaspoon chopped fresh thyme leaves


Instructions

  1. Preheat and prepare dough: Heat oven to 425°F and place the oven rack in the low position. Unroll the pizza dough onto an ungreased large cookie sheet lined with oven-safe parchment paper. Brush the dough evenly with olive oil. Bake the crust for 7 minutes to par-bake it, then remove from oven.
  2. Caramelize onions and cook mushrooms: While the dough bakes, melt butter in a 10-inch nonstick skillet over medium heat. Add the thinly sliced onions and salt; cook for 3 to 5 minutes, stirring occasionally until the onions soften but do not brown. Add the sliced mushrooms and continue cooking for 5 to 7 minutes until the mushrooms are softened and beginning to brown. Stir in the chopped garlic, then remove the skillet from the heat.
  3. Assemble the pizza: Spread the caramelized onion and mushroom mixture evenly over the par-baked pizza dough. Distribute the baby spinach leaves on top, followed by the shredded mozzarella and Parmesan cheeses.
  4. Bake until golden and bubbly: Return the assembled pizza to the oven and bake for an additional 7 to 11 minutes, or until the cheese is melted, bubbly, and the crust turns golden brown. Once baked, sprinkle the fresh chopped thyme leaves on top before slicing and serving.
