Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Cook Bacon: In a large skillet over medium heat, cook the bacon pieces until they are crisp. Use a slotted spoon to remove them from the skillet and set aside, leaving the rendered fat in the pan.
  3. Prepare Beef Mixture: Add the ground beef and chopped onion to the skillet with the bacon fat. Cook over medium heat, breaking up the beef with a spoon until it is fully cooked through and the onion has become translucent, about 7 to 10 minutes. Add the minced garlic last and sauté for about 1 minute until fragrant. Drain any excess grease from the mixture.
  4. Flavor the Filling: Remove the skillet from heat and stir in the ketchup, Worcestershire sauce, chopped dill pickles, and the cooked bacon pieces, mixing everything evenly to combine the flavors.
  5. Form the Bombs: While the beef mixture cools slightly, roll each biscuit dough piece out on a clean surface until approximately ¼ inch thick. Divide the beef filling and shredded cheddar cheese evenly among the rolled biscuits. Pinch the edges together tightly to form a sealed ball that encloses the filling completely. Place each ball seam side down onto the prepared baking sheet.
