Crepes:
- 1 cup all-purpose flour
- 2 large eggs
- 1 1/2 cups milk
- 2 tablespoons melted butter
- 1 tablespoon sugar

Cheesecake Filling:
- 8 oz cream cheese (softened)
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup heavy cream (whipped to stiff peaks)

- Chocolate syrup
- Powdered sugar
- Crushed graham crackers
Instructions
- Crepes: In a mixing bowl, whisk together flour, eggs, milk, melted butter, sugar, salt, and vanilla until smooth. Let the batter rest for 20–30 minutes. Heat a nonstick skillet over medium heat and lightly grease with butter. Pour about 1/4 cup of batter into the pan, swirling to coat the bottom. Cook for 1–2 minutes per side until golden. Remove and stack crepes on a plate.
- Cheesecake Filling: In a separate bowl, beat cream cheese until smooth. Add powdered sugar and vanilla extract and mix well. Fold in whipped cream gently until combined. Spread a thin layer of cheesecake filling on each crepe, then roll tightly. Slice in half or leave whole. Serve chilled or at room temperature with optional toppings.

- You can make the crepes and filling in advance and assemble just before serving.
