Cookies:
- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups semi-sweet chocolate chips
Cheesecake Filling:
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream Butter and Sugars: In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs one at a time, then add vanilla.
- Combine Dry Ingredients: In a separate bowl, whisk flour, baking soda, and salt. Gradually add dry ingredients to wet mixture, mixing until combined. Fold in chocolate chips.
- Prepare Cheesecake Filling: In a small bowl, mix softened cream cheese, 1/4 cup sugar, and 1/2 teaspoon vanilla until smooth.
- Assemble Cookies: Scoop 1.5 tablespoons of cookie dough, flatten in palm, add 1 teaspoon of filling to center, top with another flattened scoop of dough, and seal edges. Place on baking sheet.
- Bake: Bake for 12–14 minutes until edges are golden brown. Cool on sheet for 5 minutes before transferring to rack.
