Ingredients
Scale
Vegetables
- 4 large zucchinis, cut lengthwise into 1-inch thick slices
Seasonings and Oils
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
Cheese
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
Garnish
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
- Arrange and Oil Zucchini Slices: Lay the zucchini slices on the prepared baking sheet. Brush both sides of each zucchini steak evenly with olive oil to help them roast nicely and develop flavor.
- Season with Garlic and Italian Herbs: In a small bowl, combine the minced garlic, dried Italian seasoning, salt, and black pepper. Rub this garlic and herb mixture evenly over the tops of each zucchini slice for a flavorful base.
- Initial Roasting: Roast the zucchini in the preheated oven for 15 minutes. This step softens the zucchini and brings out its natural flavors while allowing the garlic to infuse the slices.
- Add Cheeses and Continue Baking: Remove the baking sheet from the oven and sprinkle shredded mozzarella and grated Parmesan cheese evenly over each zucchini steak. Return the sheet to the oven and bake for another 5 to 7 minutes, or until the cheese has melted and turned golden brown.
- Garnish and Serve: Once baked, garnish the hot zucchini steaks with freshly chopped parsley if desired. Serve warm as a delicious side dish.
Notes
- You can substitute mozzarella with provolone or a blend of Italian cheeses for a different flavor profile.
- For a spicy kick, sprinkle crushed red pepper flakes over the zucchini before baking.
