Description

This Cherry Coke Fudge is a delightful twist on classic fudge, combining the rich creaminess of white baking chips and marshmallow creme with the unique flavor of cherry gelatin and Coca-Cola. Enhanced by sweet maraschino cherries and a cocoa-Cola frosting, this fudge offers a luscious, nostalgic treat perfect for any occasion.

Ingredients

Scale

Fudge

  • ¾ cup butter
  • 3 cups granulated sugar
  • â…” cup heavy whipping cream
  • 2 tbsp cherry gelatin (Jell-O)
  • 12 oz white baking chips
  • 7 oz marshmallow creme
  • 1 tsp cherry or vanilla extract
  • 10 oz maraschino cherries, drained and chopped

Frosting

  • ½ cup unsalted butter
  • 3 tbsp unsweetened cocoa powder
  • 6 tbsp Coca-Cola
  • 1 lb powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Make the Fudge: In a medium saucepan over medium heat, melt ¾ cup butter. Add 3 cups granulated sugar, ⅔ cup heavy whipping cream, and 2 tbsp cherry gelatin. Stir constantly until the mixture comes to a boil. Allow it to boil for 5 minutes while continuously stirring to prevent burning or sticking.
  2. Combine Ingredients: Remove the saucepan from heat. Immediately stir in 12 oz white baking chips, 7 oz marshmallow creme, and 1 tsp cherry or vanilla extract. Mix thoroughly until the mixture is smooth and well combined.
  3. Add Cherries and Set: Gently fold in 10 oz chopped maraschino cherries. Pour the fudge mixture into a greased or parchment-lined 9×13-inch pan. Spread evenly and let it cool completely at room temperature until set.
  4. Prepare the Frosting: In a small saucepan, melt ½ cup unsalted butter over medium heat. Add 3 tbsp unsweetened cocoa powder and 6 tbsp Coca-Cola, stirring until combined. Bring the mixture to a light boil, then remove from heat.
  5. Finish the Frosting: Gradually whisk in 1 lb powdered sugar and 1 tsp vanilla extract into the warm cocoa-Cola mixture until smooth and glossy.
  6. Apply Frosting: Spread the warm frosting evenly over the cooled fudge in the pan. Allow it to set before cutting the fudge into squares for serving.

Notes

  • For best results, use full-fat ingredients like heavy cream and unsalted butter for a rich texture.
  • Make sure to stir the fudge constantly during boiling to avoid burning.
  • Allow fudge to cool completely before frosting to prevent melting the frosting.
  • Store the fudge in an airtight container at room temperature for up to one week or refrigerate to extend shelf life.
  • Chop maraschino cherries finely for even distribution and better texture.
