Instructions

  1. Prepare the Cherry Dough: In a medium bowl, combine the finely chopped maraschino cherries, powdered sugar, softened butter, almond extract, and salt. Mix thoroughly until a thick dough forms that holds together well.
  2. Chill the Dough: Cover the bowl and place it in the refrigerator for 30 minutes to allow the mixture to firm up, making it easier to handle and shape.
  3. Form Truffle Balls: After chilling, scoop and roll the cherry dough into 1-inch balls. Arrange these balls on a baking sheet lined with parchment paper to prevent sticking.
  4. Freeze for Firmness: Place the tray with the cherry balls in the freezer for 20 to 30 minutes until they become firm and easier to dip.
  5. Melt Chocolate and Peanut Butter: In a microwave-safe bowl, combine the semi-sweet chocolate chips and creamy peanut butter. Microwave in 30-second intervals, stirring after each, until the mixture is smooth and fully melted.
  6. Add Chopped Peanuts: Stir the chopped peanuts into the melted chocolate and peanut butter mixture to add texture and flavor to the coating.
