Ingredients
Bread:
2 slices of sourdough or whole grain bread
Sauce:
1 tablespoon mayonnaise, ½ teaspoon Dijon mustard
Filling:
½ ripe avocado (sliced), ½ cup cooked shredded chicken breast, 2 slices tomato, 1 slice red onion (optional), 1 slice provolone or mozzarella cheese
Additional:
1 tablespoon butter (for grilling), salt and pepper to taste
Instructions
- Prepare the Bread: Spread mayonnaise and Dijon mustard on one side of each bread slice.
- Assemble the Sandwich: Layer avocado, chicken, tomato, and onion on one slice. Season with salt and pepper. Top with cheese and the second bread slice.
- Grill the Sandwich: Melt butter in a skillet over medium heat. Cook the sandwich for 3–4 minutes on each side until golden brown and cheese melts. Slice and serve warm.
Notes
- You can substitute provolone with cheddar or Swiss cheese.
- Rotisserie chicken works well for convenience.
