Instructions

  1. Prepare the sauce: In a small bowl, whisk together the chicken broth, low sodium soy sauce, sugar, sesame oil, sherry vinegar, minced garlic, minced ginger, red chili flakes (if using), and white pepper until well combined. Set aside.
  2. Coat the chicken: Place the chicken pieces in a large bowl. Season with salt and pepper, then sprinkle with cornstarch. Toss everything together until the chicken pieces are evenly coated with the cornstarch mixture.
  3. Heat the pan and oil: Warm 2 tablespoons of oil in a large nonstick skillet over medium heat, preparing it for cooking the chicken.
  4. Cook the chicken: Add the coated chicken pieces in a single layer to the skillet. Cook without moving them for about 4 minutes per side, allowing the chicken to develop a golden brown crust and to cook through.
  5. Add the scallion whites: Stir in the white parts of the scallions and cook for 30 seconds to 1 minute to release their flavor.
  6. Incorporate sauce and broccoli: Give the prepared sauce a quick whisk and pour it into the skillet along with the broccoli florets. Cook while stirring frequently until the sauce thickens and the broccoli becomes tender but still crisp, about 5 minutes.
