Description

For the Pasta:

  • 3 cloves garlic (minced)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup cherry tomatoes (halved)
  • 2 cups fresh spinach
  • 3/4 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 8 ounces penne pasta (cooked and drained)
  • 1/4 cup pasta water (reserved)
  • fresh basil (for garnish, optional)


Instructions

  1. Prepare the Chicken: Heat olive oil in a skillet, season chicken with salt, pepper, and Italian seasoning, and cook until browned and cooked through.
  2. Cook the Pasta: Add garlic, red pepper flakes, cherry tomatoes, and spinach. Stir in cream and Parmesan cheese to make a sauce. Toss with cooked pasta and reserved water.
  3. Serve: Garnish with fresh basil and enjoy!

Notes

  • You can substitute heavy cream with half-and-half for a lighter version.
