Broth and Flavorings:

  • 3 cups fish or vegetable broth
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 tablespoon fish sauce
  • zest and juice of 2 limes

Proteins and Vegetables:

  • 1 pound white fish fillets (such as cod or halibut, cut into chunks)
  • 1 cup cherry tomatoes (halved)
  • 2 cups baby spinach
  • salt and pepper to taste

Garnish:

  • fresh cilantro and lime wedges for serving

Instructions

  1. Sauté Aromatics: Heat coconut oil in a pot, sauté onion until translucent. Add garlic, ginger, and chili, cook until fragrant.
  2. Add Broth and Coconut Milk: Pour in broth, coconut milk, fish sauce, lime zest, and juice. Simmer.
  3. Cook Fish and Tomatoes: Add fish and cherry tomatoes, simmer until fish is cooked through.
  4. Finish with Spinach: Stir in baby spinach until wilted. Season with salt and pepper.
