Description

Cowboy Mushrooms is a savory and flavorful sautéed mushroom dish featuring large button mushrooms cooked with butter, olive oil, aromatic onions and garlic, and seasoned with smoked paprika, chili powder, fresh thyme, and Worcestershire sauce. This hearty side pairs perfectly with steak, grilled meats, or mashed potatoes, offering a rustic and rich flavor profile inspired by classic cowboy cuisine.

Ingredients

Scale

Mushrooms

  • 1 lb large button mushrooms, cleaned and sliced

Cooking Fats

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil

Aromatics & Seasonings

  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon salt (or to taste)
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Liquids

  • 1/4 cup beef broth (or vegetable broth for a vegetarian option)
  • 1 tablespoon Worcestershire sauce

Garnish

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the mushrooms: Clean the mushrooms by wiping them with a damp cloth or paper towel. Slice them evenly to ensure even cooking.
  2. Sauté the aromatics: In a large skillet, heat the butter and olive oil over medium-high heat. Add the diced onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.
  3. Cook the mushrooms: Add the sliced mushrooms to the skillet and stir to combine with the onions and garlic. Cook for 6-8 minutes, stirring occasionally, until the mushrooms release their moisture and become tender.
  4. Season and simmer: Stir in the smoked paprika, onion powder, chili powder, salt, and black pepper. Add the fresh thyme and continue to cook for another 1-2 minutes, allowing the flavors to meld together.
  5. Deglaze with broth and Worcestershire sauce: Pour in the beef broth and Worcestershire sauce. Stir well, scraping up any browned bits from the bottom of the pan. Let the mixture simmer for 5-6 minutes until the broth reduces slightly and the mushrooms are coated in a flavorful sauce.
  6. Garnish and serve: Remove the skillet from heat and garnish the cowboy mushrooms with freshly chopped parsley for a burst of color and freshness.
  7. Enjoy: Serve these savory mushrooms as a delicious side dish or as a topping for steak, grilled meats, or mashed potatoes to add robust flavor to your meal.

Notes

  • Use vegetable broth instead of beef broth to make this recipe vegetarian.
  • Adjust the salt and chili powder to your taste preference.
  • For extra richness, you can add a splash of cream towards the end of cooking.
  • Serve immediately for the best texture and flavor.
  • These mushrooms can also be used as a topping for burgers or toasted bread.
