Ground Beef Mixture:
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
Stew Ingredients:
- 1 (15 oz) can diced tomatoes
- 1 (15 oz) can ranch-style beans or pinto beans
- 1 (15 oz) can corn, drained
- 2 cups peeled and diced potatoes
- 1 ½ cups beef broth
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- ½ teaspoon ground cumin
- Salt and black pepper to taste
- Optional: ½ cup shredded cheddar cheese and chopped fresh parsley for garnish
Instructions
- Prepare Ground Beef Mixture: Heat olive oil in a large pot or Dutch oven over medium heat. Add the ground beef and cook until browned. Drain excess grease if needed.
- Sauté Aromatics: Add chopped onion and cook for 3-4 minutes. Stir in garlic and cook for another minute.
- Add Stew Ingredients: Add diced tomatoes, beans, corn, potatoes, and beef broth. Season with chili powder, smoked paprika, cumin, salt, and pepper.
- Simmer: Bring the stew to a boil, then reduce heat to low, cover, and simmer for 25–30 minutes until potatoes are tender.
- Adjust Seasonings and Serve: Taste and adjust seasonings. Serve hot, optionally topped with cheese and parsley.

- You can swap the ground beef with ground turkey or sausage.
- For a spicier version, add a chopped jalapeño or a pinch of cayenne pepper.
