Ground Beef Mixture:

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced

Stew Ingredients:

  • 1 (15 oz) can diced tomatoes
  • 1 (15 oz) can ranch-style beans or pinto beans
  • 1 (15 oz) can corn, drained
  • 2 cups peeled and diced potatoes
  • 1 ½ cups beef broth
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • Salt and black pepper to taste
  • Optional: ½ cup shredded cheddar cheese and chopped fresh parsley for garnish


Instructions

  1. Prepare Ground Beef Mixture: Heat olive oil in a large pot or Dutch oven over medium heat. Add the ground beef and cook until browned. Drain excess grease if needed.
  2. Sauté Aromatics: Add chopped onion and cook for 3-4 minutes. Stir in garlic and cook for another minute.
  3. Add Stew Ingredients: Add diced tomatoes, beans, corn, potatoes, and beef broth. Season with chili powder, smoked paprika, cumin, salt, and pepper.
  4. Simmer: Bring the stew to a boil, then reduce heat to low, cover, and simmer for 25–30 minutes until potatoes are tender.
  5. Adjust Seasonings and Serve: Taste and adjust seasonings. Serve hot, optionally topped with cheese and parsley.

Notes

  • You can swap the ground beef with ground turkey or sausage.
  • For a spicier version, add a chopped jalapeño or a pinch of cayenne pepper.
