Description

Crack Chicken Pinwheels are a deliciously addictive appetizer featuring a creamy mixture of shredded chicken, cream cheese, ranch dressing, cheddar cheese, and bacon rolled into soft flour tortillas and sliced into bite-sized pinwheels. They are quick to prepare, perfect for parties or gatherings, and sure to be a crowd-pleaser.

Ingredients

Scale

Filling

  • 2 cups cooked chicken, shredded (rotisserie chicken works great)
  • 8 oz cream cheese, softened
  • 1/2 cup ranch dressing (or ranch dip for a thicker texture)
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, finely chopped (optional)
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp paprika (optional)

Rolls

  • 4 large flour tortillas (regular or whole wheat)

Instructions

  1. Prepare the filling: In a medium-sized bowl, combine the softened cream cheese, ranch dressing, shredded cheddar cheese, crumbled cooked bacon, finely chopped green onions if using, garlic powder, onion powder, and paprika. Mix all ingredients thoroughly until well blended.
  2. Spread the mixture: Lay out each flour tortilla flat on a clean surface. Evenly spread an ample layer of the chicken and cheese mixture across each tortilla, leaving about a half-inch border around the edges to prevent overflow when rolling.
  3. Roll the tortillas: Starting at one edge, tightly roll the tortillas into a log shape to ensure the filling sticks together. Once rolled, wrap them in plastic wrap and chill in the refrigerator for 10 to 15 minutes to help firm up the rolls, making them easier to slice.
  4. Slice into pinwheels: After chilling, remove the rolls from the refrigerator and unwrap. Using a sharp knife, slice each roll into 1 to 1.5-inch thick pinwheels. Arrange the pinwheels on a serving platter and serve immediately or keep chilled until ready to serve.

Notes

  • For added flavor, you can substitute ranch dressing with ranch dip for a thicker filling.
  • Use rotisserie chicken for convenience and enhanced flavor, but any cooked shredded chicken works.
  • Try using whole wheat tortillas for a healthier twist.
  • If not serving immediately, keep the pinwheels refrigerated to maintain freshness.
  • Optional paprika adds a subtle smoky note and vibrant color.
