- 1 large yellow onion, thinly sliced
- 2 tablespoons unsalted butter
- 20 oz refrigerated cheese tortellini
- 3 cloves garlic, minced
- 8 oz cremini or white mushrooms, sliced
- 5 oz fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon ground nutmeg
- Salt and black pepper to taste
- 1/4 cup reserved pasta water (optional)
- Chopped fresh parsley for garnish (optional)

Instructions
- Cook the tortellini: Cook the tortellini according to package directions, drain, and set aside.
- Caramelize onions: In a large skillet, heat olive oil and slowly cook sliced onions until golden and caramelized. Remove from skillet.
- Sauté mushrooms and spinach: In the same skillet, sauté garlic, add mushrooms, cook until tender, then add spinach and cook until wilted.
- Make the cream sauce: Stir in heavy cream, Parmesan cheese, nutmeg, salt, and pepper. Simmer until slightly thickened.
- Combine and serve: Return onions to the skillet, add tortellini, toss gently to coat. Add reserved pasta water if needed. Heat through and serve garnished with parsley.
Notes
- You can use frozen tortellini if fresh isn’t available—just follow the cooking instructions on the package.
- Substitute half-and-half for heavy cream for a lighter version.
