Description

    Caramelized Onions:

  • 1 tablespoon olive oil
  • 1 large yellow onion, thinly sliced
  • 2 tablespoons unsalted butter
  • Spinach Mushroom Tortellini:

  • 20 oz refrigerated cheese tortellini
  • 3 cloves garlic, minced
  • 8 oz cremini or white mushrooms, sliced
  • 5 oz fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon ground nutmeg
  • Salt and black pepper to taste
  • 1/4 cup reserved pasta water (optional)
  • Chopped fresh parsley for garnish (optional)


Instructions

  1. Cook the tortellini: Cook the tortellini according to package directions, drain, and set aside.
  2. Caramelize onions: In a large skillet, heat olive oil and slowly cook sliced onions until golden and caramelized. Remove from skillet.
  3. Sauté mushrooms and spinach: In the same skillet, sauté garlic, add mushrooms, cook until tender, then add spinach and cook until wilted.
  4. Make the cream sauce: Stir in heavy cream, Parmesan cheese, nutmeg, salt, and pepper. Simmer until slightly thickened.
  5. Combine and serve: Return onions to the skillet, add tortellini, toss gently to coat. Add reserved pasta water if needed. Heat through and serve garnished with parsley.

Notes

  • You can use frozen tortellini if fresh isn’t available—just follow the cooking instructions on the package.
  • Substitute half-and-half for heavy cream for a lighter version.
  • Add red pepper flakes for a touch of heat.
