- Spring roll wrappers – 8 sheets
Filling
- Shredded cabbage – 1 cup
- Shredded carrots – 1/2 cup
- Chopped mushrooms – 1/2 cup
- Minced garlic – 2 cloves
- Soy sauce – 2 tablespoons
- Sesame oil – 1 teaspoon
- Fresh cilantro, chopped – 2 tablespoons
- Pepper flakes – 1/4 teaspoon (optional)
- Salt – to taste
- Black pepper – to taste
- Cooking oil for sautéing – 1 tablespoon
- Water – for sealing wrappers
- Cooking spray or oil spray – for air fryer basket and spraying spring rolls
Instructions
- Prepare the filling: Heat a skillet over medium heat and add 1 tablespoon of cooking oil. Once hot, sauté the minced garlic until fragrant, about 1 minute. Add the shredded cabbage, carrots, and chopped mushrooms to the skillet and cook for about 5 minutes, stirring occasionally, until the vegetables are tender but still maintain a slight crispness.
- Flavor it: Drizzle 2 tablespoons soy sauce and 1 teaspoon sesame oil over the cooked vegetables, stirring well to combine evenly. Season the mixture with salt and black pepper to taste, and add pepper flakes if you like some heat. Remove from heat and stir in 2 tablespoons of chopped fresh cilantro. Allow the filling to cool slightly before assembling.
- Wrap it: Lay one spring roll wrapper on a clean surface. Place approximately 2 tablespoons of the vegetable filling near one corner of the wrapper. Fold the corner over the filling, then fold in the left and right sides tightly, and roll it up like a burrito, sealing the edge with a little water to hold it closed. Repeat with the remaining wrappers and filling.
- Air fry: Preheat your air fryer to 375°F (190°C). Lightly spray the air fryer basket with cooking spray to prevent sticking. Arrange the spring rolls in a single layer in the basket without overcrowding. Lightly spray the tops of the spring rolls with oil spray for extra crispiness. Air fry for 10 to 12 minutes, turning halfway through cooking, until the wrappers are golden brown and crispy.
- Serve hot: Carefully remove the crispy spring rolls from the air fryer using tongs. Serve immediately with your favorite dipping sauces such as sweet chili sauce, soy sauce, or peanut sauce for a delicious appetizer or snack.
