Description

These Crispy Garlic Butter Potatoes are a flavorful and easy side dish that pairs well with any meal. Roasted to golden perfection, these potatoes are seasoned with garlic, herbs, and a touch of butter for a delicious finish.

Ingredients

Scale

Potatoes:

  • 2 pounds baby potatoes, halved or quartered if large

Seasoning:

  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme or rosemary (optional)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat and Prepare: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Toss Potatoes: In a large bowl, toss the halved potatoes with melted butter, olive oil, minced garlic, salt, pepper, and herbs if using.
  3. Roast: Spread the potatoes out in a single layer on the prepared baking sheet, cut side down for extra crispiness. Roast for 30 to 35 minutes or until golden brown and crispy on the edges, flipping once halfway through for even browning.
  4. Finish: Remove from the oven and sprinkle with chopped parsley before serving.

Notes

  • For extra crisp edges, soak the potatoes in cold water for 30 minutes, then pat dry before roasting.
  • You can also use Yukon Gold or red potatoes for slightly different textures.
  • Add a sprinkle of Parmesan before roasting for a cheesy finish.
