- ½ cup red enchilada sauce

Instructions
- Cook the Beef: Heat a skillet over medium-high heat and add the ground beef. Cook, breaking it apart with a spatula, until browned evenly. Drain any excess fat if necessary. Stir in the taco seasoning packet and red enchilada sauce, then reduce the heat and simmer the mixture for 5 minutes to blend the flavors. Remove from heat.
- Prepare the Tortillas: Wrap the corn tortillas in a damp paper towel and microwave them for 30 to 60 seconds until they become pliable and easy to fold. Lightly brush one side of each tortilla with olive oil to help achieve a crispy texture during baking.
- Assemble the Tacos: Preheat your oven to 450°F (232°C). On a nonstick or ceramic baking sheet, place each tortilla with the oiled side down. Sprinkle shredded cheese over half of each tortilla, then spoon a generous amount of the cooked beef mixture on top of the cheese. Fold the tortilla in half gently over the filling and press down lightly to secure.
- Bake the Tacos: Place the baking sheet in the preheated oven and bake the tacos for about 16 minutes. Flip them carefully halfway through baking to ensure both sides become golden brown and crispy.
