Description

These Crispy Pesto Mozzarella Wraps combine the rich flavors of homemade pistachio pesto with fresh mozzarella, sliced tomatoes, and creamy avocado, all nestled inside whole wheat wraps. Toasted to a golden crisp in a skillet, they make for a quick, delicious, and satisfying meal or snack perfect for any time of day.

Ingredients

Scale

Wrap and Spread

  • 2 whole wheat wraps
  • 4 tablespoons homemade pistachio pesto (or any favorite pesto)

Filling

  • 6-8 slices fresh mozzarella
  • 4-6 slices ripe tomatoes
  • 1/2 medium avocado, sliced
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the Wrap: Lay one whole wheat wrap flat on a clean surface. Spread a generous layer of your homemade pistachio pesto evenly over the surface of the wrap.
  2. Add the Fillings: Arrange slices of fresh mozzarella, tomatoes, and avocado over the pesto layer. Season the fillings lightly with salt and freshly ground black pepper to enhance the flavors.
  3. Fold the Wrap: Fold the wrap burrito-style by tucking in the sides towards the center and then rolling it tightly to enclose the fillings securely.
  4. Toast the Wrap: Heat a skillet over medium heat. Place the wrapped burrito seam side down onto the skillet. Toast for about 2–3 minutes until the underside is golden and crisp. Carefully flip and toast the other side for an additional 2–3 minutes, ensuring both sides are evenly browned and the cheese melts slightly.
  5. Serve: Remove the wrap from the skillet. Slice it in half diagonally for easy handling and serve warm. Add extra pesto on the side if desired for dipping or an extra burst of flavor.

Notes

  • Use whole wheat wraps for added fiber and a wholesome taste.
  • Homemade pistachio pesto can be substituted with basil pesto, sun-dried tomato pesto, or any pesto of your choice.
  • Sliced ripe tomatoes and creamy avocado complement the mozzarella’s richness perfectly.
  • Toast the wraps on medium heat to avoid burning and ensure even crisping.
  • For a spicier version, add red pepper flakes inside the wrap before folding.
