Ingredients
Scale
Steak Marinade
- 1 tablespoon olive oil
- 1 teaspoon lime juice
- 1 teaspoon cumin powder
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1 pound skirt or flank steak
Vegetables
- 1 green bell pepper, cut into strips
- 1 red bell pepper, cut into strips
- 1 yellow onion, sliced thin
Assembly
- 4 to 6 large flour tortillas
- 4 to 6 tostadas or crispy flat chips
- 1.5 cups shredded Mexican cheese mix
- 1/2 cup guacamole
- 1/2 cup sour cream
Optional Extras
- Queso
- Fresh cilantro
- Jalapeño slices
Instructions
- Prepare Marinade: In a bowl, mix together olive oil, lime juice, chili powder, garlic powder, cumin powder, and smoked paprika until combined. Coat the skirt or flank steak evenly with this marinade. Let the meat rest for 30 minutes to absorb the flavors.
- Sear Steak: Heat a pan over high heat. Sear the steak for about 3 to 4 minutes on each side until it develops a nice crust. Remove from heat and allow it to rest briefly before slicing thinly across the grain to ensure tenderness.
- Cook Vegetables: In the same or another hot pan, cook the sliced onion and bell pepper strips until they become soft and slightly charred. This takes approximately 8 to 10 minutes, enhancing their natural sweetness and flavor.
- Assemble Wraps: Lay out each large flour tortilla. In the center, layer some sliced steak, cooked vegetables, shredded cheese, one tostada, guacamole, and sour cream. Carefully pull up the edges of the tortilla and tuck them in to fully enclose the filling, creating a wrap.
- Pan-Grill Wraps: Place each folded wrap seam-side down on a warm skillet or pan. Cook for 2 to 3 minutes on each side until the outside turns crispy and golden brown, which helps seal the wrap and melt the cheese inside.
- Serve: Cut the crispy steak wraps in half and serve warm. Add optional toppings like queso, fresh cilantro, or jalapeño slices for an extra flavor boost.

- Adjust spice levels by modifying chili powder and jalapeños according to preference.
