- 6 ounces chicken stuffing mix (1 box)
Sauces & Liquids
- 10.5 ounces cream of chicken soup (1 can)
- 8 ounces sour cream (1 small container)
- ½ cup low-sodium chicken broth (store-bought or homemade)
Instructions
- Prepare the Slow Cooker: Spray the crock of a 6-quart slow cooker with nonstick spray and set aside to prevent sticking.
- Sauté Aromatics: Heat the butter in a skillet over medium heat, then add diced onion and celery. Cook for 5 minutes until softened and translucent. Transfer to a large bowl to cool.
- Season the Chicken: While vegetables cool, season the chicken breasts with Italian seasoning, garlic powder, kosher salt, and freshly ground black pepper.
- Layer Ingredients in Crockpot: Place the seasoned chicken breasts in the bottom of the slow cooker. Sprinkle the chicken stuffing mix evenly over the chicken.
- Combine Sauce: In the bowl with cooled sautéed vegetables, add cream of chicken soup, sour cream, and chicken broth. Stir well to combine into a creamy mixture.
- Add Sauce Over Stuffing: Pour the creamy sauce mixture evenly over the stuffing and chicken in the slow cooker.
- Cook: Cover and cook on high for 4 hours or on low for 6-7 hours, until the chicken is cooked through and the stuffing is tender and flavorful.
Notes
- For best results, use fresh herbs in your Italian seasoning blend if possible.
- You can substitute cream of mushroom or cream of celery soup according to preference.
- Make sure to spray the slow cooker well to prevent sticking of the stuffing mix.
- If you prefer a thicker sauce, you can reduce the chicken broth amount slightly.
- This dish pairs well with a green vegetable or salad to balance the creamy richness.
