Ingredients
Scale
Sausage
- 1 lb kielbasa sausage, sliced into 1-inch pieces
Vegetables
- 1 lb fresh green beans, trimmed and halved
- 4 medium-sized potatoes, peeled and cubed
- 1 medium onion, chopped
- 3 cloves garlic, minced
Liquids & Oils
- 2 cups chicken broth
- 2 tbsp olive oil
Seasonings
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes (optional, for added spice)
- 1 tbsp chopped fresh parsley for garnish
Instructions
- Prepare Crockpot: Set your crockpot to the low heat setting to begin warming it up for cooking.
- Sauté Kielbasa: Heat olive oil in a large skillet over medium heat. Add the sliced kielbasa sausage and sauté until lightly browned on all sides, about 5 minutes. Remove from heat and set aside.
- Sauté Onions and Garlic: In the same skillet, add chopped onion and minced garlic. Cook until the onion is translucent and fragrant, about 2-3 minutes.
- Add Vegetables to Crockpot: Place the cubed potatoes, green beans, and sautéed onions and garlic into the bottom of the crockpot.
- Layer Sausage: Add the browned kielbasa sausage on top of the vegetables in the crockpot.
- Pour Broth: Pour chicken broth over the mixture, ensuring all ingredients are submerged.
- Season: Sprinkle salt, black pepper, and optional red pepper flakes over the top for added flavor and heat.
- Cook: Cover the crockpot with the lid and cook on low for 6-8 hours, or on high for 3-4 hours, until potatoes are tender and green beans are cooked to your desired texture.
- Final Seasoning: Before serving, stir all ingredients well to combine flavors. Taste and adjust salt and pepper if needed.
- Garnish and Serve: Sprinkle chopped fresh parsley over the dish for garnish and serve warm.
Notes
- You can use smoked or fresh kielbasa depending on your preference for added smokiness.
- Red pepper flakes are optional and can be adjusted to taste or omitted for a milder dish.
- Cooking times may vary based on your crockpot model; check the tenderness of vegetables before serving.
- For a thicker broth, remove the lid during the last 30 minutes of cooking to reduce liquid slightly.
- Leftovers store well in the refrigerator for up to 3 days and can be reheated thoroughly.
