Description

A hearty and flavorful Crockpot Sausage and Potatoes recipe perfect for an easy, hands-off meal. Tender baby potatoes, smoky sausage, fresh green beans, and diced tomatoes with green chilies are slow-cooked together with butter and Italian seasonings, delivering a comforting and satisfying dish ideal for family dinners.

Ingredients

Scale

Meat and Vegetables

  • 2 pounds smoked sausage, sliced
  • 2 pounds baby potatoes, halved
  • 2 medium onions, chopped
  • 3 garlic cloves, minced
  • 12 ounces fresh green beans

Other Ingredients

  • 10 ounces diced tomatoes and green chilies (with liquid)
  • 4 tablespoons butter (1/2 stick)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste

Instructions

  1. Prepare Ingredients: Slice the smoked sausage, halve the baby potatoes, chop the onions, and mince the garlic cloves. Rinse and trim the fresh green beans.
  2. Add to Crockpot: Place the sausage, baby potatoes, chopped onions, minced garlic, and green beans into the crockpot in an even layer.
  3. Add Tomatoes and Seasonings: Pour the diced tomatoes and green chilies with their liquid over the mixture. Add the butter and sprinkle Italian seasoning, smoked paprika, salt, and pepper evenly on top.
  4. Cook: Cover the crockpot and cook on low heat for 6 to 8 hours or on high heat for 3 to 4 hours, until the potatoes are fork tender and the flavors have melded beautifully.
  5. Serve: Once cooked, give the dish a gentle stir to combine everything, then serve warm as a comforting main course.

Notes

  • You can use any type of smoked sausage, such as kielbasa or Andouille, based on your preference.
  • If fresh green beans are unavailable, frozen green beans may be substituted; add them halfway through cooking to avoid overcooking.
  • Adjust seasoning to taste before serving, especially the salt and pepper.
  • This recipe can be doubled for larger gatherings by using a larger crockpot.
  • Leftovers store well in the refrigerator for up to 3 days and can be reheated on the stovetop or microwave.
