Description

This Easy Breakfast Pizza on a Tortilla is a quick and delicious morning meal perfect for busy weekdays. Featuring a crispy tortilla base topped with a savory mixture of eggs, ham, peppers, and cheese, this breakfast pizza combines familiar flavors into a fun and satisfying dish that’s ready in under 20 minutes.

Ingredients

Scale

Vegetables

  • 1/2 cup onion, diced (about 1 small onion)
  • 1 cup green pepper, diced
  • Chives, optional, for garnish

Proteins

  • 1 cup ham, diced
  • 8 large eggs

Dairy

  • 2 tablespoons milk
  • 1 cup shredded cheese (Monterey Jack, Colby, or Mozzarella)

Other

  • 2 tablespoons olive oil
  • 1 teaspoon hot sauce
  • 4 tortillas or whole wheat pitas
  • Olive oil (for brushing tortillas)

Instructions

  1. Prepare the Vegetables and Ham: Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the diced onion and green pepper, sautéing until they become soft and slightly translucent, about 3-4 minutes. Then add the diced ham and cook for an additional 2 minutes to warm through and develop flavor.
  2. Make the Egg Mixture: In a bowl, whisk together the 8 large eggs, 2 tablespoons of milk, and 1 teaspoon of hot sauce until well combined. Pour the egg mixture into the skillet with the vegetables and ham. Cook, stirring gently, until the eggs are just set but still moist, about 3-4 minutes. Remove from heat.
  3. Prepare the Tortillas: Preheat your oven to 400°F (200°C). Lightly brush each tortilla or whole wheat pita with olive oil on both sides, then place them on a baking sheet. Bake the tortillas for about 3-4 minutes to get them crisp but still flexible.
  4. Assemble the Breakfast Pizzas: Remove the tortillas from the oven and evenly distribute the cooked egg, ham, and vegetable mixture over each one. Sprinkle 1 cup of shredded cheese evenly across the pizzas.
  5. Melt the Cheese: Return the assembled tortillas to the oven and bake for another 3-4 minutes, or until the cheese is fully melted and bubbly.
  6. Garnish and Serve: Remove the breakfast pizzas from the oven, garnish with chopped chives if desired, slice, and serve warm.

Notes

  • You can use whole wheat or regular flour tortillas depending on your preference.
  • Add additional toppings like mushrooms, tomatoes, or cooked bacon for extra flavor.
  • If you like it spicy, increase the amount of hot sauce or add red pepper flakes.
  • This recipe can easily be doubled or halved to suit your needs.
  • Leftovers can be stored in the refrigerator for up to 2 days and reheated in the oven or microwave.
