Instructions
- Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add the diced onion and cook for about 4 minutes until softened and translucent. Then, stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add Chicken and Spices: Add the shredded cooked chicken to the pot along with the taco seasoning, ground cumin, and chili powder. Stir thoroughly to coat the chicken and aromatics evenly with the spices.
- Combine Remaining Ingredients: Stir in the drained black beans, corn, diced tomatoes, Rotel tomatoes with green chilies, and chicken broth. Mix everything well to combine all flavors.
