Rice Noodles:
- 8 oz pancit bihon
Stir-Fry:
- 2 tablespoons vegetable oil
- 4 cloves garlic (minced)
- 1 small onion (sliced)
- 1/2 lb chicken breast (thinly sliced)
- 1/4 lb shrimp (peeled and deveined)
- 1 cup shredded cabbage
- 1 cup julienned carrots
- 1 cup green beans (sliced diagonally)
Sauce and Garnish:
- 1/4 cup soy sauce
- 1 tablespoon oyster sauce
- 1/2 teaspoon ground black pepper
- 1 1/2 cups chicken broth
- 2 green onions (chopped)
- 1 lemon (sliced for garnish)
Instructions
- Soak the Noodles: Soak the pancit bihon noodles in warm water for 10 minutes or until softened, then drain and set aside.
- Sauté Aromatics: Heat oil in a large wok or skillet over medium heat. Sauté garlic and onions until fragrant.
- Cook Chicken and Shrimp: Add the sliced chicken and cook until lightly browned. Add the shrimp and stir-fry until pink.
- Add Vegetables: Toss in the carrots, green beans, and cabbage, and cook until slightly tender.
- Make the Sauce: Add soy sauce, oyster sauce, pepper, and chicken broth. Bring to a simmer.
- Combine: Add the softened noodles. Toss everything together until noodles absorb the liquid and are heated through.
- Finish and Serve: Remove from heat and top with chopped green onions and lemon slices. Serve hot.
Notes
- You can substitute chicken with pork or tofu for a variation.
- For a spicier version, add sliced chili or a dash of chili oil.
- Pancit is traditionally served with calamansi, but lemon works well too.
