Description

This Filipino Pancit recipe is a classic stir-fried noodle dish that’s popular in Filipino cuisine. Made with rice noodles, chicken, shrimp, and vegetables, this flavorful and satisfying dish is a staple at gatherings and family meals.


Ingredients

Rice Noodles:

  • 8 oz pancit bihon

Stir-Fry:

  • 2 tablespoons vegetable oil
  • 4 cloves garlic (minced)
  • 1 small onion (sliced)
  • 1/2 lb chicken breast (thinly sliced)
  • 1/4 lb shrimp (peeled and deveined)
  • 1 cup shredded cabbage
  • 1 cup julienned carrots
  • 1 cup green beans (sliced diagonally)

Sauce and Garnish:

  • 1/4 cup soy sauce
  • 1 tablespoon oyster sauce
  • 1/2 teaspoon ground black pepper
  • 1 1/2 cups chicken broth
  • 2 green onions (chopped)
  • 1 lemon (sliced for garnish)

Instructions

  1. Soak the Noodles: Soak the pancit bihon noodles in warm water for 10 minutes or until softened, then drain and set aside.
  2. Sauté Aromatics: Heat oil in a large wok or skillet over medium heat. Sauté garlic and onions until fragrant.
  3. Cook Chicken and Shrimp: Add the sliced chicken and cook until lightly browned. Add the shrimp and stir-fry until pink.
  4. Add Vegetables: Toss in the carrots, green beans, and cabbage, and cook until slightly tender.
  5. Make the Sauce: Add soy sauce, oyster sauce, pepper, and chicken broth. Bring to a simmer.
  6. Combine: Add the softened noodles. Toss everything together until noodles absorb the liquid and are heated through.
  7. Finish and Serve: Remove from heat and top with chopped green onions and lemon slices. Serve hot.

Notes

  • You can substitute chicken with pork or tofu for a variation.
  • For a spicier version, add sliced chili or a dash of chili oil.
  • Pancit is traditionally served with calamansi, but lemon works well too.
