Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal later.
- Mix Wet Ingredients: In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until the mixture is smooth and creamy. Add the egg, vanilla extract, and creamy peanut butter, mixing thoroughly until well combined.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add these dry ingredients into the wet mixture, stirring until just combined to avoid overmixing.
- Add Mix-ins: Gently fold in the mini marshmallows, peanut butter chips, and chopped peanuts (if using) into the dough, distributing them evenly throughout.
- Layer Dough and Fluff: Spread half of the dough evenly into the prepared baking pan. Dollop the marshmallow fluff over this layer and gently spread it out to cover.
- Top and Bake: Carefully top with the remaining dough, pressing lightly to cover the marshmallow fluff layer. Bake in the preheated oven for 25 to 30 minutes, or until the top is golden and a toothpick inserted in the center comes out mostly clean.
- Cool and Slice: Allow the bars to cool completely in the pan. Use the parchment paper overhang to lift the bars out, then slice into 12 pieces before serving.
