Instructions

  1. Mix dry ingredients. In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt. Make a well in the center for the wet ingredients.
  2. Add wet ingredients and whisk. Pour in the milk, melted butter, vanilla extract, and egg into the well. Whisk gently until the batter is smooth with some lumps remaining; the batter should be thick. Add a bit more milk if you prefer a thinner consistency.
  3. Heat the pan and grease. Place a nonstick pan or griddle over medium-low heat and coat with butter to prevent sticking.
  4. Cook pancakes. Pour 1/4 cup of batter onto the heated pan and gently spread into a round shape using the back of the measuring cup. Cook until the underside is golden and bubbles form on top, then flip carefully with a spatula and cook until the other side is golden as well. Repeat with the remaining batter.
