Cauliflower and Mushroom:
- 1 medium head cauliflower, cut into small florets
- 8 oz cremini or button mushrooms, cleaned and sliced
Seasonings and Extras:
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 1 tablespoon fresh parsley, chopped (optional)
- Juice of half a lemon (optional)
Instructions
- Preheat the Oven: Preheat the oven to 425°F (220°C).
- Mix Vegetables: In a large bowl, combine cauliflower, mushrooms, olive oil, garlic, thyme, paprika, salt, and pepper. Toss to coat.
- Roast: Spread vegetables on a baking sheet. Roast for 25–30 minutes, stirring halfway, until golden and tender.
- Finish and Serve: Optionally, squeeze lemon juice, sprinkle parsley, and serve.
Notes
- For extra flavor, add Parmesan cheese in the last 5 minutes of roasting.
