Instructions

  1. Preheat the Oven: Preheat the oven to 425°F (220°C) and place a 9×13-inch baking dish or two 9-inch pie dishes in the oven while it preheats.
  2. Mix the Batter: In a large bowl, whisk together eggs, milk, flour, salt, vanilla extract, and sugar until smooth.
  3. Prepare the Pan: Remove the hot pan from the oven, add butter, and swirl to coat the bottom and sides.
  4. Bake: Pour the batter into the pan and bake for 20–25 minutes until puffed and golden.
  5. Serve: Sprinkle with powdered sugar and serve with lemon wedges or maple syrup.

Notes

  • For extra flavor, add a pinch of cinnamon to the batter.
  • The pancake will deflate slightly after coming out of the oven—that’s normal.
