Instructions
- Preheat the Oven: Preheat the oven to 425°F (220°C) and place a 9×13-inch baking dish or two 9-inch pie dishes in the oven while it preheats.
- Mix the Batter: In a large bowl, whisk together eggs, milk, flour, salt, vanilla extract, and sugar until smooth.
- Prepare the Pan: Remove the hot pan from the oven, add butter, and swirl to coat the bottom and sides.
- Bake: Pour the batter into the pan and bake for 20–25 minutes until puffed and golden.
- Serve: Sprinkle with powdered sugar and serve with lemon wedges or maple syrup.
Notes
- For extra flavor, add a pinch of cinnamon to the batter.
- The pancake will deflate slightly after coming out of the oven—that’s normal.
